Cardamom
Cardamom, a member of the ginger family, is considered the second most valued spice in the world (saffron being number one.). Cardamom comes from India, Guatemala and Ceylon. It has an intense, pungent, sweet flavor and is traditionally used in curry blends in India. In Scandinavian countries it is commonly added to breads. Its number one use, however, is as a flavoring for coffee in Arabic countries. A small amount of cardamom adds an interesting flavor to coffee cake, Danish pastries, specialty breads and apple pie.
